Serves: 4
Cooking Time: 1 1/2 hours

    2 cups beaujolais wine
    2 cups sugar
    1/2 cups dried apples
    1/2 cup dried dates
    3 cloves
    1/2 cup dried figs
    1/2 cup dried peaches
    1/2 tsp. vanilla
    1/2 cup dried apricot
    1/2 cup dried cherries
    1 cinnamon stick
    1 tsp. minced fresh ginger
  1. Set the temperature to 221°F (Boil), set timer to 1 1/2 hours, press "ON".
  2. Add sugar and wine to the inner pot and bring to a boil, dissolving the sugar.
  3. Add remaining ingredients and return to a boil. Close the lid. Turn off the unit.
  4. Allow the fruit to steep and absorb the wine and sugar. If all the liquid is absorbed and the fruit is too firm or not enough syrup remains for a sauce, add additional wine and sugar in equal amounts. Return to a boil and repeat the steeping process/.
  5. Serve the poached fruits either warm or cold with ice cream.
