1 1/2 cups buttermilk or heavy cream
1 cup half & half
1/2 cup sugar
1/3 cup water
3/4 cup drained crushed pineapple
1 cup frozen pineapple juice concentrate (defrosted)
1/2 tsp. grated lemon peel
1 tbs. finely chopped peeled ginger root
- In a small saucepan, combine the water, sugar and ginger and bring to a boil. Continue cooking until the ginger releases its flavor and the sugar is dissolved (approx. 3-4 minutes).
- Remove saucepan from heat and cool until the mixture bemoes luke warm.
- Pour through strainer into a blender or food processor. Add remaining ingredients and process until smoth. Cover and chil thoroughly.
- Mix a few seconds before pouring. Follow standard nstructions.
