Serves: 4
Cooking Time: 40-50 minutes

Ingredients:

    2 acorn squash 8 oz. each (halved lengthwise, seeds removed)
    8 tsp. brown sugar (light or dark)
    4 tsp. butter
    salt and black pepper to taste

Method:
  1. Place glass bowl on base, wire rack in glass bowl and lid on bowl. Preheat oven to 482°F for 6 minutes.
  2. Place 1 tsp. butter and 2 tsp. brown sugar in each of the halves of squash. Season with salt and pepper.
  3. Place on the lower rack of the oven.
  4. Reduce temperature to 392°F and set timer to 50 minutes.
  5. Bake for 40 minutes or until esily pierced with a fork and well browned.
